Ni Men Hao!
For anyone who doesn’t know me and my story, I lived in China from 2008 – 2010.
I loved it and I’m happy to be back home at the same time. However, I still get cravings for Chinese food now and then that Panda Express, even with their vegetables swimming in soy sauce and their fortune cookies, just can’t satisfy.
Such a craving came yesterday. Luckily, I found I already had all the ingredients necessary for one of my favorite, healthy, vegetarian Chinese dishes: Xi Hong Shi Chao Ji Dan Gai Fan
It’s a very simple dish, meaning “Tomato Fried Egg with Rice.”
1 cup brown rice
4 large eggs
1 large tomato, chopped (or, if you’re in a pinch like I was, 1 can of chopped tomato with green chilies)
1 small green chili
1 clove garlic, chopped
1 tsp sugar
2 tsp vegetable oil
1 tsp red pepper flakes
Salt, to taste
Cook rice and set aside.
Lightly beat four eggs with a fork in a small mixing bowl and set aside.
Set stovetop to medium and heat empty wok, wait until wok begins to smoke and pour in 1 tsp vegetable oil. Wait 10 seconds and pour in eggs. Beat lightly until fluffy, plate, and set aside.
Pour in another 1 tsp vegetable oil. Add tomatoes, chilies, and garlic. Wait for flavors to blend, then add sugar, red pepper flakes, and eggs. Stir. Drain rice and stir into the mixture. Add salt as desired.
Prep time (excluding rice cook time): 10 minutes
